Sodium alginate is a natural carbohydrate, which is generally used as stabilizer and thickener in the food industry. Its powder becomes wet with water, the hydration of the particles makes its surface sticky, and then the particles quickly bond together to form agglomerates, which very slowly hydrate completely and dissolve into a viscous solution. Binding with other ions Among the metal salts of alginate, except for Na+, K+, Mg+ and NH4+ which are soluble in water, all other metal salts are insoluble in water. Using this property, the colloidal solution of sodium alginate is contacted with calcium ions, and ionic cross-linking can occur to form calcium alginate gel. The gel formation process can be controlled by adjusting the pH value, selecting the appropriate calcium salt and adding phosphate buffer or chelating agent. The gels formed by cross-linking of sodium alginate and calcium ions are stable and completely biodegradable, and are mainly used for cell encapsulation and immobilization.
